    Delicious Pecan Pie

    Ingredients

    200 g ginger cookies (crushed)

    50 ml margarine (melted)

    250 ml soft brown sugar

    125 ml white sugar

    37,5 margarine

    125 ml pecans (chopped)

    3 eggs (beaten)

    5 ml vanilla extract

    Method

    Combine the crushed cookies and melted margarine together.

    Mix well.

    Press the cookie mixture into a greased pie dish.

    Set the cookie crust aside.

    Combine the brown sugar, white sugar and margarine together in a saucepan.

    Heat on a low heat until the mixture starts to boil.

    Remove from the heat.

    Add the chopped pecans, beaten eggs and vanilla extract.

    Mix well.

    Pour the pecan mixture into the ginger cookie crust.

    Bake at 180 degrees C for 25 minutes or until thee pecan pie is baked.

    Remove from the oven.

    Leave the pecan pie to cool.

    Serve warm or cold (with or without vanilla ice cream).

    Caramel Pecan Cake

    Ingredients

    250 ml boiling water

    125 ml oil

    375 ml soft brown sugar

    3 eggs

    500 ml flour

    15 ml baking powder

    1 ml salt

    5 ml vanilla extract

    125 ml pecans (chopped)

    100 ml soft brown sugar

    37,5 ml margarine

    750 ml icing sugar

    Water

    Method

    Combine the boiling water and oil together.

    Mix well.

    Leave the mixture to cool.

    Sift the flour, salt and baking
