WHY RAW?
Food in its raw state has all the vitamins and minerals intact. Cooking destroys, changes and eliminates many of the healthy elements of food like vitamins, fiber, etc. Most importantly, cooking anything over 118 degrees kills all of the enzymes in the food. Enzymes are the things that help us break down and assimilate nutrients; without them our body has to use its own limited supply of enzymes causing us to age faster and have digestion problems and poor absorption of vital nutrients.
Every food in its whole form has been designed with all of the right elements working together synergistically like a good sports team to digest that food. Each food has a unique balance of enzymes, fat, fiber, vitamins and minerals, etc that work together optimally for our bodies’ absorption of the life-giving qualities of that particular food. When we process it, alter it and cook it, we are messing with the natural balance. Cooking also creates many new carcinogenic and indigestible compounds that our body was not created to process; thus causing health problems and disease. The more raw whole foods you eat, the better! No, I don’t mean raw meat!
