ince the beginning of recordedtime, man has been preserv-ing food items in a variety of ways.Ancient Middle East culturesutilized the arid desert to dry and pre-serve meat and vegetables. Those livingin the arctic regions used the ice to pre-serve the meat they needed to survive.Since the dawn of the industrial age,however, we have lost a lot of that an-cient wisdom. We rely on commercialfarms and grocery stores for our needs.We have allowed a select few to monop-olize the food chain, placing the averagecitizen in a precarious position of depen-dency on global corporations.Recent disasters like the terrorist at-tacks on the Twin Towers and HurricaneKatrina show us that we need to be pre-pared. When disaster strikes, you can’tcount on the government or the state toprovide for you.Even if you live in a high rise apartment,you can take advantage of whateverspace you have available for growing andstoring food items. You can utilize meth-ods of preserving food that will take intoconsideration your family size and stor-age area. For those with a sizable pantryor basement, canning may be the pre-ferred method. For those where space isa highly valuable commodity, dehydra-tion may be the way to go. There are no special skills required tolearn how to preserve your own foodsafely. With the economic crisis the worldnds itself in, and everyone looking forways to stretch their money, there’s nobetter time to start learning food storagesecrets!
