Easy Roasted Vegetables

(adapted from Pampered Chef recipe)

Ingredients: Your choice of sliced vegetables: portabella mushrooms with onions; potatoes with garlic; asparagus, potatoes, and mushrooms, garlic sweet potatoes and regular potatoes, cut up like wedge fries and seasoning added: Potato seasoning: For 4 cups of potatoes: 1 tsp. salt, 1 tsp. cumin, tsp. chili powder. Stir to evenly coat potato wedges before cooking. Directions: Preheat oven to 450 F. Sprinkle bottom of cookie sheet with coconut oil or butter and melt in preheating oven. Pour on vegetable slices and spread out. Douse with a touch of coconut oil, butter, or olive oil. Cook for 30 minutes, stirring around once or twice while cooking.
