Sprouts with Applewood Smoked Bacon & Shallots

! Ingredients ! ! 1 Pounds Brussels Sprouts, Outer Leaves Removed, Trimmed and Halved 2 Large Shallots, Peeled and Sliced 1 Cups Applewood Smoked Bacon, Sliced and Cut into small Strips. Cup Balsamic Vinegar Cup Dry White Wine Kosher Salt and Fresh Ground Pepper

Serves 6 In heavy boOom pan, saut bacon bits over medium-high heat, sRrring occasionally unRl crispy. You may want to drain the fat occasionally, but dont throw it away! Youll need it later. When bacon is crispy remove from pan and place in a sieve, reserving drippings. Deglaze pan with wine, add 1 Tablespoon bacon drippings, and shallots, saut unRl shallots are starRng to brown (about 3 minutes). Add Brussels Sprouts, and balsamic and conRnue to saut unRl they begin to so[en (about 10 minutes). Dont let them get too so[. You want them to be slightly Al dente.
