Paleo Sweet Potato, Bacon & Egg Salad


A quick, easy paleo brekkie for two.

Ingredients
2/3 cup diced sweet potato 2 free-range eggs 2 rashes of bacon, diced using meat only 1 tbs oil 4tbs dill, finely chopped 2tbs mayonnaise 2 tbs lemon juice

Instructions
1. Boil eggs in water for 4-6 minutes. Peel & dice eggs 2. Boil sweet potato for 4-5 minutes or until cooked through 3. Place a frying pan on medium-high heat, add olive oil & bacon & fry until browned & slightly crunchy 4. In a small bowl, combine dill, mayonnaise & lemon juice 5. Place eggs, sweet potato, bacon & mayonnaise sauce in a medium size serving bowl & combine well to serve
