Bakewell Tart

Pastry:
100g P. flour 50g butter 8-10 teaspoons of water

Equipment:
scales mixing bowl knife measuring jug
teaspoon

Sponge:
25g butter 40g S.R flour 25g caster sugar 1 egg a few drops of almond essence 2-3 teaspoons of jam

wooden spoon rolling pin patty tin large pastry cutter

Oven:
Gas 6 / 200C

Method:
1. Put oven on. 2. Rub the flour and butter together until it resembles bread crumbs. Add the water until it forms a dough, by using a knife. 3. Roll out the dough and add flour so that it doesnt stick. 4. Using the cutter make shapes and place in patty tin. 5. Add a small teaspoon of jam into each pastry case. 6. Make the sponge mixture by the All- in- One method by beating until smooth. 7. Carefully place a teaspoon of cake mix over the jam. 8. Place into the oven and cook for 10 minutes. 9. Do not eat until slightly cool. Serving Suggestions: Can also be made as one large tart.
