Now and in the upcoming time toxin freePanmasala, tobacco less gutkhaless tobaccoZarda demand is growing day by days arevery common food products. Generally theyare taken by the peoplesof all age group after their meals. Panmasala tobacco is therefined tobacco with catechu, chuna,flavouring agents and perfumerycompounds etc. It refreshens the mouthand gives the feeling of cold in throat whentaken in small amount. Panmasala tobaccois chewed either with pan or directlywithout any other thing. Zarda of variousgrades, specified by different numbers,constitutes different proportions of zarda intobacco. The higher the grade number of zarda panmasala, the higher it will containzarda content. Zarda if taken in high doseis injurious to health and gives the feelingof laziness and unconsciousness. Kimam isthe sweetened masala, usually taken bypeoples who are not in regular routine ochewing tobacco. It is generally a mouthfreshner and believed to increase appetiteby improving digestion system.
CHEWING TOBACCO
Chewing tobacco is cultivated in almostevery state of the Indian Union. Theimportant growing states are Chennai, Bihar,West Bengal, Punjab and U.P. Generallythe same variety is consumed in a number of forms. Thus the disvariety (N. Tobacco) inBihar is used both for hookah and chewing.The best middle leaves of Jati (N-tobaccoand motihari M. Vasatica) with a browncolour thick texture and pungent taste areused. In Bengal for chewing while the restof the leaves are used for hookah. The desitobacco grown around Biswan in sitapur district is considered, suitable for chewingthough it is also used to some extent for hookah.
PRODUCT USE
They are used in pan making or is consumedwithout pan ie., chewing the product. It is avery important ingredient of pan as itenhances the taste of all other ingredients of pan and also provides desired taste andfreshness to the consumer. As alreadyspecified it is consumed after meals generallybut its increasing practice has made it verycommon. It is used as freshner and it isbelieved to improve appetite by improvingfunctioning of digestive systems.Tobacco if taken regularly in high dose,makes the person lazy and further is veryinjurious to health. It causes diseases mainlyof abdomen, lungs, throat and alsoproblems in mouth related to teeth, tongueetc.
TOXIN FREE PAN MASALA, TOBACCOLESS GUTKHA AND ZARDA
INTRODUCTION
Pan Masala tobacco, zarda of differentgrades and kimam is available inconvenient sizes in pouches and alsocontainers (tins) of metal, cardboard paper,plastics etc. The packages are sealedproperly to maintain original freshness andtaste and is made of attractive materials,which increases the interest of consumer.
MARKET POSITION
Now a days Pan Masala has very goodmarket demand due to consumers habit.There is very good scope of pan masala. Actuallys on pan masala market, data is notavailable but tobacco based product hasmarket survey data. Basically pan masalaa substitute of tobacco products. Users of tobacco products largely converted to usepan masala.
PAN MASALA INGREDIENTS1. LIME
The quick lime available from the market is inthe form of lumps. It is first slaked with water to form hydrated or slacked lime. Careshould be taken while adding the water asexcess of water will made the lime in pasteform. Otherwise a powdered lime will beadded as requirement. 2. BETAL NUTS
The betal nuts are first crushed or cut intosmall pieces. It is wetted in water in a tankover night so that the piece become quitesoft.
3. CARDAMOM
Cardamom is peeled off its shell and theseeds are taken out. These seeds arethen grounded and pulverised into a finemesh size.
4. ATTAR & PERFUMES
 Attar & perfumes are then mixed andblended well before adding to the mainmixture.
