•In South Carolina, striped bass are a prized gamefish and high quality food fish with amild sweet taste and firm flaky texture. Wild striped bass caught in South Carolina maynot be sold, but farm-raised striped bass is a very good alternative when sourcing localseafood.•Striped bass are suitable for aquaculture because they can be successfully grown infresh, brackish, and salt water.•Cultured fish are particularly well suited to the restaurant trade because of consistency insize, yield and quality.
