- Quaternary structure: union more than one protein subunit
- Dietary protein are not same as proteins in cells and body fluids
- Protein digested by pepsin in stomach to small peptide and finally to amino acids
- Proteolytic enzymes: protein – splitting enzyme
- Amino acids absorbed by mucosal cells of small intestines and transported to liver
