I don’t carewhich recipe or sauce you choose from this book, if the particular cut of meat is cooked well-done, it’s not going to taste like mine.Don’t limit your recipe search to a specic animal. Most recipes for duck,for instance, will work for any waterfowl or antlered game. e only dierence will be cooking time, depending on the thickness of the meat.If you’re looking for a widgeon recipe and all you can nd are recipes formallard, you’re good. Use the mallard recipe and just don’t cook it quiteas long, since it’s a smaller bird. If it works on walleye, it’ll work with any other mild, white, aky sh.Enjoy!
