Marcel Proust was born July 10, 1871 with the first name--
Valentin. In his honor this Valentine’s
week a special recipe of madeleines below 
the cookie associated with his 'In Search of Lost Time'--written in bed the last 14-years of his life.The richest asset we have is time. Proust wanted us to think about this--he died at 51 having been ill for years and regretting
 
his wasted first four decades. Scientists estimate the odds of any individual being born at about one in 400 trillion. For  perspective--that's double total world wealth of $200T USD. Anyone with a life is already the winner of the greatest lottery  possible.I'm continually questioning if hourly value extracted is equal tothe rarity of this gift--a very personal quantifier. Baking cookies for someone you love with a sense of occasion might be one of themost enriching things you'll ever do.
 
Orange-Blossom-Honey-Madeleines~
 
16 servings~from Bon Appetit 
These little citrus-scented cakescook in just 10 minutes. Use one 16-cookie madeleine pan with3x2" molds
Ingredients~
 
3/4 cup all-purpose flour 
 
1/2 teaspoon baking powder 
 
1/8 teaspoon kosher salt 
 
 2 large eggs
 
1/3 cup sugar 
 
 2 tablespoons orange blossom honey 
 
 2 teaspoons vanilla extract 
 
1/2 teaspoon finely grated orange zest 
 
5 tablespoons unsalted butter, melted, cooled, plus more for molds
