Biology: Enzymes Enzymes are proteins produced by organism and are known as biological catalyst.

A catalyst is used to speed up chemical reactions without being used up. 5 properties on enzymes: they are all proteins, each enzyme catalyses one reaction, they can be used again and again, they are influenced by temperature, they are influenced by pH. Enzymes are in a shape that makes it suitable for catalyzing one reaction. Factors that affect the rate of reaction: temperature, pH, enzyme concentration, substrate concentration, surface area Enzymes work best at only one particular temperature and pH. Uses of Enzymes The role of enzymes in germination: When seeds absorb water, the embryo synthesizes amylase. Amylase diffuses into the cotyledons and breaks down starch into maltose.
