I had the same issue. So I've not been putting the yeast in dry. I take what ever liquid the recipe calls for and make it warm and let the yeast blossom for 5 mins and then put it in the machine. Bread is so much lighter now, not the rock that used to come out. I'm guessing because my machine is like 20 years old it isn't doing something right.

How can I get a manual for my Hitach bread machine. I've yet to get a loaf of bread to come out right. I didn't get a manual with mine machine and iI understand the order you put things in the machine, etc. differs from machine to machine. I'd love to make a light weight rye loaf or anything that doesn't come out like a rock or dough.
