COOKIE RECIPESPEANUT BUTTER COOKIES:¾ C. creamy peanut butter ½ C. shortening (Crisco sticks)1 ¼ C. firmly packed light brown sugar 3 T. milk 1 T. vanilla1 egg1 ¾ C. flour ¾ t. Salt¾ t. Baking sodaPreheat oven to 375Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat atmedium speed with electric mixer until well blended.Add egg and beat just until blended.Combine flour, salt and baking soda.Add to creamed mixture at low speed.Mix just until blended.Shape into 1 ½ inch balls . Place on baking sheet and flatten with tines of fork in crisscross pattern (lightly dip fork tines into flour to keep batter from sticking to fork)Bake 7-8 minutesRemove from oven and press mini peanut butter cups or Hershey kisses into center of cookie. Let set a couple of minutes then remove to a cool surface till cooled completely. NOTE: I usually double this recipe.------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------
 
SUGAR COOKIES¾ C. butter 1 C. sugar 2 eggs1 t. vanilla2 ½ C. flour 1 t. baking powder 1 t. salt NOTE: I always double this recipe.Preheat oven to 400Cream butter and sugar.Beat in eggs and flavoring.Combine flour, baking powder, and salt and blend into egg mixtureChill dough for at least an hour Roll dough 1/8” thick and cut into shapes with cookie cuttersPlace on ungreased tray and bake for 6-8 minutesIf you want to put sprinkles on the cookies, use pastry brush to lightly brush egg white oncookie dough and then shake sprinkles on cookies. Then bake.
 
SNOWBALL COOKIES2 C. flour ¼ C. sugar (generous)1 ¾ C. ground walnuts (or other type of nut is fine)14 T. butter Confectioners sugar  NOTE: This recipe can be doubled.Preheat oven to 350Mix flour, sugar and ground nuts in large bowl.Cut in butter.Knead ingredients with fingers, then hands and form a smooth ball.Wrap in waxed paper and refrigerate for 1 hour.Remove from frig and roll into 1 inch balls. Place on cookie sheetsBake 15-20 minutesWhen balls are cool, roll in conf. sugar.
