REMARKS ObservationB-1 FIELD OF APPLICATION

The hygienic practices cover the appropriategeneral techniques for collecting drinkingwater, its treatment, bottling, packaging,storage, transport, distribution and sale fordirect consumption, so as to guarantee a safehealthy and whole some product.

B-2 HYGIENE PRESCRIPTIONS FORCOLLECTION OF DRINKING WATER

B-2.1 Extraction or Collection

In the case of extraction or collection of waterintended for packaging from ground watersources, it should be ensured that it is safefrom pollution, whether caused by naturaloccurrence or actions or neglect or ill-will.It may be ensured that the groundwater source is reasonably away fromany polluting source like drain/ sewer/ septic tank. Ground water source(whether owned/shared) shall beunder the direct control andsupervision of the manufacturer. Firmshall ensure that the ground watersource is safe from pollution either bynatural occurrence or because ofaction/ neglect/ ill-will shall be taken.

B-2.2

If water to be processed for packing isobtained from any other potable source itshould be protected from its beingcontaminated.The Firm shall ensure that the sourceshould be protected and free from anycontamination.

B-2.3

The firms using waters from drinkingwater systems intended for packaging, shouldensure that it meets the requirements of thestandard.The Firm shall ensure that the waterused for packaging conforms to IS10500

B-2.4 Materials

The pipes, pumps or other possible devicescoming into contact with water and used for itscollection should be made of such material thatthey do not change the quality of water.The material used in pipes, pumps orother devices come into contact withwater shall be such which does notchange the quality of the productwater.

B-3 PROTECTIVE MEASURESB-3.1

All possible precautions should be takenwithin the protected perimeter to avoid anypollution of, or external influence on, the qualityof the ground or surface water. Preventivemeasures should be taken for disposal ofliquid, solid or gaseous waste that could pollutethe ground or surface water. Drinking waterresources should not be in the path of potentialsource of underground contamination.The surrounding of the source wateroutlet should be completely coveredwith pucca construction to avoidcontamination due to ingress ofexternal causes. If it is at ground levelthen it should be covered with at least30 cm high boundary wall.

B-3.2 Protection of the Area of Origin

The immediate surroundings of the extractionor collection area should be protected bylimiting access to authorized persons only.Wellheads and spring outflows should beprotected by a suitable structure to prevententry by unauthorized individuals, pests andother sources of extraneous matter.Outlets of bore well/ well headsshould be tightly covered and locked.Units should prevent entries ofindividuals, pests and other sourcesof extraneous matter to the immediatesurroundings of source of water.

REMARKS ObservationB-4 TRANSPORT OF DRINKING WATERB-4.1

Means of Transport, Piping andReservoirsAny vehicle, piping or reservoir used in theprocessing of water from its source to thebottling facilities, should be made of inertmaterial such as ceramic and stainless steelwhich prevent any deterioration, be it by water,handling, servicing or by disinfection; it shouldallow easy cleaning.i) The pipes used in processing ofwater shall be either of stainless steelor of any inert material. The reservoirmay be either of stainless steel,ceramic or other inert material or withinert lining.ii) For the inert material other thanstainless steel and ceramic, the firmshall submit the certificate ofinertness of the material.

B-4.2 Maintenance of Vehicles andReservoirs

Any vehicle or reservoir should be properlycleaned and, if necessary, disinfected and keptin good repair so as not to present any dangerof contamination to drinking water and ofdeterioration of its quality.The design of reservoir should besuch as to enable easy cleaning ordisinfection and it should be properlymaintained

B-5 ESTABLISHMENT FOR PROCESSINGOF DRINKING WATER – DESIGN ANDFACILITIES

B-5.1 Location

Establishments should be located in areaswhich are free from objectionable odours,smoke, dust or other contaminants and are notsubject to flooding.The unit should not be in low lyingarea The firm should ensure thelocation is free from odour, smoke,dust and other contamination. The aircurtain and Exhaust fans may beprovided at appropriate locations.

B-5.2 Roadways and Areas Used byWheeled Traffic

Such roadways and areas serving theestablishment which are within its boundariesor in its immediate vicinity should have a hardpaved surface suitable for wheeled traffic.There should be adequate drainage andprovision should be made for protection of theextraction area.Areas in front of main entry to the unitand immediate surroundings shouldbe paved (pucca) or properly grassedto prevent dust contamination due tovehicular traffic.

B-5.3 Buildings and FacilitiesB-5.3.1 Type of construction

Buildings and facilities should be of soundconstruction and maintained in good repair.One or more of the following should beinstalled on doors, hatches and other openingsto the building to render opening pest proof :a) Doors, self closing type;b) Air curtains; andc) Strip curtainsBuildings should be soundconstruction, plastered and painted/ white washed.

REMARKS ObservationB-5.3.2 Disposition of Holding Facilities

Rooms for recreation, for storing or packagingof water and areas for cleaning of containers tobe reused should be apart from the bottlingareas to prevent the end products from beingcontaminated. Raw materials and packagingmaterials and any other materials which comeinto contact with drinking water should bestored apart from other material.Area for cleaning of reusablecontainers, packaging material andstorage of finished water should beseparate from processing/filling area.All types of packaging materialsshould be stored in a separate room/ area.The recreation room should also beaway from processing area.

B-5.3.3

Adequate working space should beprovided to allow for satisfactory performanceof all operations.Space should be available so as toensure easy movement in differentoperations of manufacturing.

B-5.3.4

The design should be such as to permiteasy and adequate cleaning and to facilitateproper supervision of hygiene for drinkingwater.

B-5.3.5

The buildings and facilities should bedesigned to provide separation by partition,location or other effective means betweenthose operations which may cause cross-contamination.There should not be any other activityexcept processing and packaging ofwater. In case similar products likecold drink/ beverages/ soda are alsobeing manufactured in the samepremises, these activities should beclearly and entirely separated fromwater processing and packingfacilities. However, for manufacturingsuch food items, use of processedwater through a separate pipe lineand separate plant and machinerymay be permitted.There should be proper separationbetween different processing activitieslike blowing of bottles/ storage ofcontainers: cleaning of reusablecontainers: raw water storage tank:filtration (ROs/Micron) disinfectionand filling.Exhaust of laboratory should not openin processing/ filling area.

B-5.3.6

Buildings and facilities should bedesigned to facilitate hygienic operations bymeans of a regulated flow in the process fromthe arrival of the drinking water at the premisesto the finished product, and should provide forappropriate conditions for the process and theproduct.The flow of air should be from fillingroom to the outer area and not theother way round.
