INTRODUCTION
Japan is an island nation, its surrounding seaswarmed by Kuroshio, the plankton rich Japancurrent and abundant with an astonishing variety of fish & shellfish. The island themselves aremountaineous and what little arable land exists isterraced & carefully cultivated to coax rice and fewother crops from the earth. Japan has always fed itsdense population from the sea and the rice fields, itscuisine emphasizing what nature provides. Sushi,the combination of raw fish and seasoned rice thatseems so exotic to foriegners is a supremely logicalfood in Japan.
