During 2008 my son-in-law, who is in the National Guard,
was activated for a full year to serve in the Sinai Peninsula of
Egypt. My daughter works full-time and is the mother of
three boys, two of them pre-school age. I live and work 400
miles from them, but I felt a very strong need to help them
survive the deployment. How could I do it? I thought and
prayed and came up with the idea to spend one week a
month at their home…..COOKING!! What follows is a
compilation of the casserole and crock-pot recipes that I
prepared for them and that THEY ALL LIKED!! (Many more
recipes were made but will not be repeated.) I would make
the recipes, freeze them, and put a list on the cupboard of
what was in the freezer and how to prepare it. My daughter
would remove the dish from the freezer in the morning, put
it in the crock pot or on the stove to thaw, and bake it after
work. This routine afforded her more time with her children
and much less time eating out. This saved time, money, and
effort. Are the recipes especially healthy? Probably not.
Are they easy to make? Absolutely! Are they kid friendly?
Ask my grandchildren!
