Pumpkin Bars Bar Ingredients: * 2 c. flour * 2 tsp. baking powder * 1 tsp. baking soda * 4 eggs * 1 2/3 c. sugar * 2 tsp.

ground cinnamon * 1/4 tsp. salt * 1 (15 oz) can pumpkin * 1 c. cooking oil Frosting Ingredients: * 1 (11 oz) package cream cheese, softened * 1/4 c. butter, softened * 2 c. sifted powdered sugar * 1 tsp. vanilla Directions: 1. In medium bowl stir together flour, baking powder, baking soda, cinnamon, and salt. Set aside. 2. In a large mixing bowl, beat together eggs, pumpkin, sugar, and oil with an electric mixer on medium speed. Add the flour mixture and beat until well combined. 3. Spread batter into an ungreased 15x10x1 - inch baking pan. Bake at 350 for 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on a wire rack. 4. In medium mixing bowl, beat together the cream cheese, butter, and vanilla until fluffy. Gradually add powdered sugar, beating until smooth. 5. Frost pumpkin bars. Cut into squares.
