SPINACH LASAGNA OR VEGETARIAN
INGREDIENTS:
16 oz ricotta or cottage cheese16 oz bag shredded Mozzarella1 jar tomato sauce ( raga traditional veggies)1 package lasagna noodles10 oz frozen chopped spinach or leaves1 garlic1 red onionPreheat Oven to 350.Zucchini - yellow / green2 tsp Olive oil
SAUCE
Heat the oil then put diced onion, garlic, zucchini let it cook, add sauce in to , add redchill , green chili masala.
METHOD
Cook the noodles in large pot of boiling salted water. Add a tablespoon of olive oil to thewater to help prevent the noodles from sticking to each other. Lightly stir few minutes.Boil about 10 minutes. Strain off the hot water and plunge the noodles into Ice water to prevent overcooking and sticking.Thaw spinach under warm. In mixing bowl, combine ricotta or cottage cheese, half of theshredded Mozzarella. Spread a small amount of sauce on the bottom of a 13 x 9 pan; puta layer of dry lasagna noodles, then a layer of half of the cheese mixture, another layer of sauce, noodles, and mixture; end with a layer of noodles, layer of sauce and rest of shredded cheese. Cover with aluminum foil and bake for 1 hour, removing foil at the last5 to 10 minutes.
