Caprese sandwich
Servings: 24 sandwichesPreheat broiler: highBoil water

Sundried tomato pesto:
Sundried tomatoes
Garlic clove
Balsamic vinegar
Soaking water
Kosher salt
Black pepper6 oz.1 clove1 cup1 cup2 Tbsp2 Tbsp½ cup½ tsp½ tsp1. Rehydrate tomatoes in boiling water, soak 1hour, then drain.2. Combine all ingredients in food processoruntil a thick, spreadable consistency isachieved.Sundried tomato pesto:5 cups (#40scoop)6. Spread 1 Tbsp of pesto on each insideportion of Kaiser roll using the #40 scoop tomeasure. Put a slice of mozzarella on thebottom, then a slice of tomato, 3-4 strips of pepper, and a slice of mozzarella on top. Closeroll and wrap sandwich in plastic wrap. Label as“Caprese sandwich” and refrigerate.Red peppers, roasted andsliced into thin strips Tomatoes, sliced thickly (3/8inch)Mozzarella cheese, slicedKaiser rolls, sliced3# fresh (about 9or 10) or 2 #303cans, well drained24 slices (approx1.5#)48 ½ oz. slices24 rolls1. To roast peppers: cut a slit from top tobottom, cut around the stem and remove. Cutseveral horizontal slits in the top and thebottom so that you can open the pepperenough to clean the seeds out. Line half sheetbaking tray with foil. Press each pepper out asflat as you can. Preheat the broiler on high.Broil for 5 minutes, check and turn the pan if some spots are much darker than others. Broilanother 4-5 minutes until much of the skin isblistered and dark. Slide peppers into a largebowl and place foil from baking sheet over thebowl. Let sit for 15 minutes then peel charredskin off.2. Slice peppers into ½ inch wide strips with aknife.3. Slice tomatoes using the slicer into 3/8 inchthick slices.4. Cheese should be pre-sliced, check to makesure it’s ½ ounces. Put tomatoes and cheeseinto the refrigerator when they are sliced untilyou are ready to assemble the sandwiches.5. Slice Kaiser rolls in half Equipment: broiler
