 Brioche dough--Pâte briochée~
 50g + 225g flour40g milk, room temperature10g fresh yeast, flaked40g sugar5 fl oz milk 1 egg, room temperature5g salt 60g soft butter1 tbsp Rum or Brandy
Vanilla custard--Crème pâtissière~
 1 egg + 1 yolk 50g sugar40g soft butter25g cornstarch50g whipped cream4 tbsp orange blossom extract 8.5 fl oz milk 1 vanilla bean, split in half longwise
