PREPARATION: KEEPING TRADITIONS The main characteristic of this cheese is that traditionally is made from raw sheep's milk with added rennet. Maturation and maintenance is performed by master cheese makers, that despite advances in technology are jealous traditional forms of processing.

It is characterized by its appearance when cut, with heterogeneously distributed abundant eyes, a pleasant aroma and a franc flavor perceived in acidic and salty flavors within elementary, with spicy trigeminal sensations. The lingering aftertaste is long with slow evolution, leaving a pleasant memory.

CONTROL: QUALITY ASSURANCE All cheese covered under the Guarantee Seal ARRIBES CHEESE OF SALAMANCA, is subjected to a series of controls that encompass the entire production process, from the farm to the issuance of the final product, ensuring its quality.
