ALMOND BISCOTTI

Ingredients: 2/3 cup granulated white sugar 2 large eggs 1 teaspoon vanilla extract 1 teaspoon baking powder 1/4 teaspoon salt 1 3/4 cups all-purpose flour 3/4 cup whole almonds (blanched or natural with skin) - roasted and chop coarsely (u may add more depending on ur preference) Method: 1. Whisk eggs and sugar until thick and light colored, add vanilla extract. 2. Sieve flour, baking powder and salt. Add to the batter. Mix well. 3. Add the almonds. Mix well. (the mixture is very sticky) 4. Dust your work counter and hands with lots of flour. 5. Roll the mixture into a sausage and placed on a baking lined with baking paper. 6. Flatten the mixture. 7. Bake for about 35 minutes at 150 degree C, or until firm to the touch. 8. Remove from oven and let cool a bit on a wire rack. 9. Cut into slices and arrange on baking tray. 10. Bake for 10 to 15 mins, turn the slices and bake again for 10 to 15 mins. 11. Cool and store in airtight container. Happy Baking!!!
