Spinach and Cheese Rolls

Ingredients Spinach,blanched and chopped Mozzarella cheese,grated Spring roll sheets Olive oil Garlic,finely chopped Ginger,chopped Green chillies,chopped Salt Refined flour (maida) Oil 1 medium 1/2 cup 8 1 teaspoon 5-6 cloves 1 teaspoon 1 teaspoon to taste 2 tablespoons to deep fry

Method Heat olive oil in a non-stick pan. Add garlic, ginger, green chillies and saut till light brown. Add spinach, salt and cook till the mixture is dry. Transfer into a bowl and allow to cool. Add cheese and mix well. Mix refined flour with sufficient water to make a thick paste. Apply the paste on the sides of spring roll sheets. Place a portion of spinach-cheese filling and roll tightly. Press the edges to seal. Heat sufficient oil in a kadai. Deep-fry the rolls on medium heat till golden brown and crisp. Drain on absorbent paper and serve hot.
