NOTES ON MY RECIPES:*Pay attention to the term “room temperature”, you will not get bigyummy cookies if you start out with cold butter and eggs, take yourbutter and eggs out of the fridge at least 4 hours before baking!*Never over bake! If your cookies look a little raw in the center, takeout anyway and leave them on the cookie sheet, they’ll finish bakingfrom the residual heat! Watch your cookies! Oven temps vary!!*Store baking powder in the fridge and baking soda in the pantry. Ifyou haven’t used either in 3 mos., throw out and buy fresh.*Never use “imitation” vanilla.*ALWAYS use unsalted butter in baking!*I always use the extra large/jumbo eggs.*You can add any kind of chocolate chips to recipes, I use a mixtureof semi-sweet, milk and sometimes the white/semi combo. I don’t likethe combo chips like peanut butter/choc or mint/choc. They tend to bevery overpowering. If you want peanut butter chips, buy plain peanutbutter chips and add your own chocolate chips.Double Chocolate Chip CookiesCream together: 1 1/2 cup butter2 cup sugarAdd: 2 eggs3 tsp. vanilla Combine: 3 1/2 cups flour1 1/2 teaspoons salt.1 cup cocoaAdd the flour mixture to the butter mixture alternately with 1/3 cupvegetable oil.
 
Then add 2 bags of chocolate chips (for these I use white chocchips). Drop rounded teaspoons of dough on cookie sheet, bake at350 degrees for about 10-12 minutes. Watch these, they will lookmoist when done.Butter Cookies(for these I always use the “Ultra Creamy” butter like Land O LakesUltra Creamy or Plugra)Cream: 2 cups (1 lb.) butter unsalted1 1/2 cups sugarAdd: 3 eggs1 tsp. vanillaCombine: 5 1/2 cups flour1 tsp. baking powder1/4 tsp. saltAdd to butter mixture until just combined. Roll out dough and usedesired cookies cutters. Bake at 350 degrees for about 7 minutes.Oatmeal Chocolate Peanut Butter BarsMix: 1 cup unsalted butter1 1/3 cups brown sugar3/4 cup Karo syrup2 tsp. vanilla
 
5 1/3 cups quick cooking oatsPlace mixture in greased 13 x 9 pan and bake at 350 degrees forabout 16 minutes (don't overbake). Let cool and then pour glaze ontop.Glaze: 1 cup creamy peanut butter1 bag chocolate chipsStir both over low heat on top of stove until chocolate melts andmixture is smooth. Cool completely after putting glaze on top (can berefrigerated) cut into bars. Chocolate Chip CookiesCream together:One pound (4 sticks) unsalted butter (room temp)2 cups white sugar2 cups brown sugarthen add:4 eggs (room temp) one at a time2 tsp. vanillaIn another bowl mix together with a wire whisk:4 cups flour2 tsp. baking powder2 tsp. baking soda1 tsp. salt5 cups Quaker Quick Oats (note: the original recipe calls for the oatsto be powdered in a blender, I've been using the oats unblended andthe cookies come out the same, it's your call)
