Rooster Healthier Mashed Potatoes
Keep saturated at low and avour high by mashingpotatoes with olive oil or extra virgin olive oil instead o butter or milk. Drain the cooked potatoes, then mash inthe saucepan until smooth, add enough Filippo Berio ExtraVirgin Olive oil to make the potatoes creamy, season withsalt and pepper and mash again.Try adding some Dijon mustard or horseradish sauceto create interesting variations to basic mashed potato.Try red or green pesto or grated Parmesan Cheeseor a real Italian avour. Add three or our skinned cloves o garlic to thewater, they will soten during cooking and can bemashed with the potatoes and olive oil.

Delicious New Roast Potatoes:
Toss new potatoesin olive oil, add cloves o garlic rom a whole bulb,and tuck in a ew bay leaves and a ew stalks o thyme.
Spicy Roast Potatoes:
Par-boil or 8 minutes, drainwell, coat in olive oil then sprinkle with a mixture o crushed chillies and cumin seeds beore roasting.
Mediterranean Roast Potatoes:
Coat in olive oilthen scatter with resh rosemary spikes and asprinkling o aked salt beore roasting.

Cheesy Baked Potatoes:
Scoop out the esh o abaked potato, mash with olive oil, add grated cheeseand chopped chives. Re-fll the shells and heat throughin the oven or10 minutes 190C/an 170C/375F/gas 5.
Baked Potatoes with Pesto:
Scoop out the esh,mash with a little olive oil then add Pesto sauce,re-fll the jackets, top with a little grated cheese andheat through in the oven or 10 minutes 190C/an170C/375F/gas 5.
Baked Potatoes with Juicy Tomatoes:
 
Choptomatoes and mix with chopped at leaved parsleyand basil, toss in Olive oil then use as a delicioustopping or a jacket potato.
Perect Dressing
For 500g cooked new potatoes, whisk 6 tbsp extra virginolive oil with 4 tsp red wine vinegar, season and add about 3tbsp chopped resh herbs. For a Mediterranean avour addthe potatoes whilst still warm so they soak up the avours.Additional ingredients can be added to the basic potato salad,either chopped black or green olives, or or a tangy avour aspoonul o capers and some chopped gherkins.
New Potatoes with a Twist:
Serve with a drizzleo Extra Virgin Olive oil and toasted chopped nutsand bacon pieces.
Crushed New Potatoes:
For 500g potatoes add4 tbsp extra virgin olive oil to the pan and crusheach potato with a ork so they break up, season.
