CONTINENTAL CUISINE. Continental cuisine usually refers to cuisine from the European continent.

Continental is mostly the cuisine of France, Italy, Spain and Portugal. Their cuisines are similar and they are neighbouring countries. When asked by Food & Wine magazine and America Online what the quintessential American food was, most Americans picked a burger & fries (67%) over fried chicken (16%), hotdogs (14%) and ice-cream sundaes (4%). Differentiate the classical and oriental cuisine. Classical cuisine It's difficult to say exactly what classical cuisine is. In Europe each country will have a range of dishes many of which may have had their origins in the kitchens of the aristocracy. So Italy has a classical cuisine as does Spain and Portugal and so on. In France the classical cuisine was catalogued and systematised by the great 19th century chef Escoffier in his book "la Repertoire de la Cuisine" and it was the dishes in this that became the standard repertoire of the restaurants of the luxury hotels of the period. Today many of these dishes are over-elaborate for the modern taste and they have been displaced to a degree by a French "Classical" cuisine which derives from simpler bourgeois cooking which reflects the sort of food you might have been served in a French bourgeois home that had a permanent cook or the food you might have been served in the home of a prosperous country landowner. Cuisine classique is a style of French cookery based on the works of Auguste Escoffier. These were simplifications and refinements of the early work of Antoine Carme, Jules Gouff and Urbain Franois Dubois. It was practised in the grand restaurants and hotels of Europe and elsewhere for much of the 20th century. The major developments were to replace service la franaise (serving all dishes at once) with service la russe (serving meals in courses) and to develop a system of cookery, based on Escoffier's Le Guide Culinaire, which formalized the preparation of sauces and dishes. In its time, it was considered the pinnacle of haute cuisine, and was a style distinct from cuisine bourgeoise (cuisine for families with cooks), the working-class cuisine of bistros and homes, and cuisines of the French provinces.

Oriental cuisine Oriental cuisine can actually refer to very different styles of Asian cooking depending on the nation or area. The Oriental section of Asia covers a huge chunk of eastern Asia known as the Far East, and thus encompasses a wide range of culinary traditions. What might be called Oriental cooking in one nation might be considered something else in another nation. Geography The geography of the area that makes up "the Orient" stretches from east Siberia south all the way to Indonesia and includes Mongolia, Japan, Korea, Vietnam, Thailand and most of China. Oriental cuisine almost always refers to some type of Asian cooking from the Far East region, eliminating most dishes from Siberia and Indonesia. Chinese Cuisine There are many types of Chinese cuisine, because different areas of China can have distinctly different styles of cooking. Many times when someone in Europe or America thinks of Oriental food, Chinese food comes to mind, with its use of chicken, rice, vegetables, sauces and exotic ingredients. Chinese food qualifies as a type of Oriental cuisine. Japanese Cuisine Japanese cuisine also is a type of Oriental cuisine. Japanese culinary tradition makes heavy use of fish, as well as sushi and other seafood. This cooking has a very distinct taste and style compared to many other types of Asian cooking from the Far East area, because there is less frying and more careful preparation of steamed or even raw foods.

Korean Cuisine Korean cuisine is another form of Asian cooking that can fall under the umbrella term of Oriental cuisine. Kimchi, a very popular dish, involves putting rotting vegetables in a stew and burying the stew pot to make it ferment. Rice, noodles, seaweed and snails are also used in Korean cuisine, and Koreans' spicy barbecue is beginning to catch on.

Southeast Asian Cuisine Cuisine from Southeast Asia also qualifies as Oriental food, with Thai and Vietnamese being the two that are most well known in Western nations. Various noodles, curries and hot spices help distinguish Southeast Asian cooking from that of some of the other Oriental nations that make up the Far East. Location Matters While Oriental cuisine is a broad term that can cover many styles of cooking, what exactly falls under "Oriental" can also depend on the location. In many parts of Asia, there are still advertisements for "Asian food," but in China this might mean Korean or Japanese food, while in Vietnam it might mean Chinese or Japanese food, and in Japan it could mean Thai or Mongolian. From that standpoint, what exactly counts as "Oriental" in Asia varies by country.
