What is the best temperature that we drink tea? That is a good question. Most American people like to drink ice tea. But, most Chinese people like to drink hot tea; few of them actually drink very hot tea. However, to answer that a question, we have first to answer what we are and for what reason we drink tea? Human being is a kind of life form. Life cannot exist without water. Life cannot survive in the solid status of water. Life cannot survive in the vapor status of water, either. So, we must obey the physical law of water. The temperature range of liquid form of water is between 00C - 1000C. The golden ratio means A : B = B : C, when C = A B. The upper point of the golden ratio of 1000C is 1000C x 0.618 = 61.80C. The lower point of the golden ratio of 1000C is 1000C - 61.80C = 38.20C. Thus, we can divide 1000C into three temperature zones: Zone E, zone T and zone D. The zone E, which covers 00C - 38.20C, means that the enzyme activity in that temperature zone will increase as the temperature rises. The zone D, which covers 61.8 - 1000C, means that most of enzymes and proteins in that temperature zone will be de-natured as the increase of temperature. The zone T, which covers 38.2 - 61.80C, means that it is a transitional temperature zone, in which most of enzymes and proteins will gradually lost their activities and cause denaturation when the temperature is increasing. The Pasteur in-activation temperature is 650C, 30 minutes. That a temperature can kill most of harmful bacteria. My suggestion to the best temperature that we drink tea is neither ice tea nor very hot tea. It is better around 38.2 0C plus or minus 5 0C. That can meet our physiological conditions need.
