Cream of Broccoli Soup
1 can cream of mushroom soup1 stalk celery, chopped (optional)3 cloves garlic, minced1 bunch broccoli, cut into small pieces3 tbsp. butter 2 tsp. Mrs. Dash seasoning1 c. onion, finely choppedMelt butter in large saucepan. Cook onions, garlic, and celery for about 5 minutes. Addbroccoli and enough water to barely cover the broccoli. Cook, covered, until the broccoliis tender (15 to 20 minutes). Add cream of mushroom soup and Mrs. Dash and stir untilsoup is well blended. Heat but do not boil.
Easy Mushroom Soup
2 cans cream of mushroom soup2 soup cans milkSliced mushroomsCombine all ingredients and heat in a medium saucepan. For variety, add a bit of freshor dried basil. Serve with fresh bread.
Mushroom & Parsley Soup
1 tbsp. butter 1 1/2 c. mushrooms, sliced1 tbsp. olive oil2 1/2 c. water 1 medium onion, chopped2/3 c. milk2 cloves garlic, minced4 tbsp. fresh parsley, choppedSalt and pepper In a large saucepan, melt the butter. Cook onion and garlic until soft (about 5 minutes).Add mushrooms and water and bring to a boil. Cook, covered, for about 10 minutes.Remove pan from heat and add milk and parsley.
