CHINESE STEAMED SPONGE CAKE
by Bob Levin
Ingredients:
2 Cups all-purpose White Flour [substitute: half all-purpose white and half whole wheat.] 1 TBSP Baking Powder 1/2 tsp Baking Soda 2 TBSP Unsalted Butter or Shortening 3 TBSP Oil 4 Eggs 1/2 Cup Sugar [whatever type of sugar or sweetener you use, add 3/4 Cups for more European sweetness.] 1/2 Cup Milk 1/2 tsp Vanilla Extract 1/2 tsp Almond Extract [Variation: Add 1 TBSP Lemon Juice, 1/2 TBSP Lemon Zest, 3 TBSP Evaporate Sweet Condensed Milk, but only use 1/2 Cup Sugar from above if you do. One day I might convert this into a coffee cake.]
1st Evolution:
Mix... 2 Cups of Flour Sifted 1 TBSP Baking Powder 1/2 tsp Baking Soda
2nd Evolution:
Melt, Mix & allow to cool... 2 TBSP Unsalted Butter or Shortening 3 TBSP Oil
