Waffles don’t have to weigh you down and they don’t have to be slathered with butter and syrup to taste great. Because of the agave and coconut oil, these  waffles will add a surprising-ly sweet note to your morning. Add a handful of mixed berries on top for color, taste, and your daily berry fix (Rule 6). Refriger-ate the extra waffles (this recipe makes six, which equals six serv-ings) in an airtight container and toast them up each morning you  want to feel like you’re indulging in a restaurant brunch!
 
Greek Yogurt Waffles
My Skinny Meals replace unhealthy ingredients with ones that can benefit you. In this case, the Greek yogurt replaces the fat that normally comes from added butter, buttermilk, or cream. And coconut oil (which is a healthy fat, though it surely doesn’t
look
healthier since it comes as a solid that looks a lot like lard) replaces traditional baking oils like canola or vegetable oil.

Heat a waffle iron.In a blender, add oats and grind until they reach a flour consistency.Add salt, baking soda, and cinnamon and pulse 2 to 3 times to combine. Add the wet ingredients and puree until smooth.Lightly grease the waffle iron with cooking spray and pour in

 cup of the batter.Cook the waffle for 4 to 5 minutes, or until the waffle iron alerts that it’s ready. Repeat with the remaining batter.
