Vice Commodore with all Mastheadtradition,we actuallysaileddownwindthe entireway from Port
Stan O'Marra Jeffersonto Mattituckon the 4th, five hoursof runningalongat 6 knots.Sweet!
RearCommodore We then had a greatweekendin Mattituck,includinga lot of wine tastingat the
Nancy Kinney North Forkvineyardsand the wonderfulcompanywith all my Mastheadfriends.lt
remindedme why I lovesailing.

Allan Pearlman to get an earlystart. But by the time we were in the middleof the sound,near

was a visitto GilletteCastle,formerhomeof stage actor
WilliamGillette,best knownfor his portrayalsof Sherlock
Holmes. In fact, it was Gillettewho createdthe Holmes
"look"with the deerstalkercap, curvedpipe and magnifying

glass,plus the phrase,"elementarymy dear Watson,"all with
the permissionof Sir ArthurConanDoyle.
The group stayedat BrewerDauntlessMarinain Essex Earlythat evening,the skiesopenedup whileall wereon
- not to be confusedwith BrewerDauntlessShipyard.Two
theirmoorings:a deluge,thunderand lightning.(Acrossthe
yearsago, the Brewerorganization purchasedThe Chandlery Sound,the Mastheadcruisersin Shelterlslandreported
and,as it alwaysdoes,upgradedthe facility.The new mari- watchingthe stormon radar,whileexperiencing onlythe

esquevistafromaboardCapricorn.Watchingthe boatsrightaroundus, largeand small,dinghiesto kayaks,luxury
and sailboatsof all sizes,I couldn'thelpbut feelan extrapangof gratitudefor Americanindependence.

My mindwent backto a conversation I had severalyearsago with a relativein the Southof France' Knowing
his lovefor the sea and the obviousboatingpossibilities offeredby the beautiful
coastlinealongthe Mediterranean, I askedwhetherthey took advantageof it.
"Oh no!"was the reply,"thatactivityif strictlyfor the veryelitehere' Owningany
typeof boat,maintaining it fromfuel to dockageis not for the averageperson'no
matterhow enthusiastic.The closestwe cometo it is a briefrentalof a small
craft or an occasionalferryride to Corsical'
Yetherewe were surroundedby someof the equallyexpensive realestatein
the world,savoringmaritimepleasuresin all their glory. Some of the vesselsmay
well havebelongedto the richand famousbut for the most partthe own-
ers/occupants were averagepeople,exercising theirrightto waterrecreation
accordingto theirchoiceand financialability.Despitethe currentsetback,the
Americandreamwas obviouslyaliveand wellfor boatersand sailorsfromall
walks of life.
That'sall the morereasonto rejoiceas we watchour red,whiteand blue

Spices:
Spiqy Chili 1 bay leaf

1 cup hot chilipowder
The amount of chilies and spices in this recipe are a suggestion. 114cupgroundcumin
Please use your discretion. You can always add heat but you can't 1 tbs eachcorianderseed and cuminseedtoastedand finelyground
take it away and I make a hot chili. My family prefers hot and spicy 1 tsDcinnamon
1/2 tsp.allspice
but the great thing about chili is you can play with the ingredientsand
1/2 tsp. groundginger
never worry about ruiningthe recipe!!
2 tbs hot paprika
lngredients Garnishes:
1/8 cup vegetableoil Cilantro,sour cream,limeand gratedcheddarcheese
2 tbs, oliveoil
1 1/2 lbs. oork shouldercut into 1 inchcubes Heatvegetableoil undermediumflamein Dutchovenand searmeat.
1 1/2 lbs. beef stew meatcut onto inchcubes Removebrownedmeatto bowl reservingliquids.Add oliveoil to Dutch
2 largeonionsroughlychopped ovenand sautdonions,carrots,celery,bell pepperuntilsoft. Nextadd
5 or 6 largeclovesgarlicroughlyminced tomatopaste,garlic,chipotlepeppersandjalapenosto pot and stir,cook
2 largecarrotsdiced 1 minute.Afterwhichadd spice ingredients exceptbay leave;givea stir and
2 stalkscelerydiced cook overlow heatfor 2 to 3 minutes.Add back in brownedmeatwith
1 largegreenbell pepperchopped reservedliquids,beef stock,coffee,adobosauce,Worcestershire sauce,
3 chipotlechiliesin adobochopped bay leaf and 112the can of tomatoes.Bringto a gentleboil then lowerheat
Reserve3 tbs adobe sauce to simmer,coverand let stew for t hourto 1 112hoursuntilmeatis fork
2 hot chiliessuch as jalapenominced(userubbergloveswhen handlinghot tender.As the chiliis simmeringcheckliquidleveland add rest of tomatoes
chilies!!!and nevertouchyourface or eyesafterhandlingchilies) as needed.lf the chiliis too liquidremovecoverand let excessliquidboil off.

1 largecan of choppedtomatoes After checkingthe meatfor doneness,correctthe seasoningwith salt and
1 cup beef broth pepper.Add beansand coverand simmerfor 15 moreminutesthen turn off
1 cup strong brewed coffee the stoveand let your chilirest beforeserving.
1/2 cup Worcestershire sauce
2 largecansof beansof choice(blackor red beansare best)drainedand White rice can be preparedat this pointand servein heapingbowlswith
rinsedundercold water your garnishes.We alsoliketo makecorn breadto go with this chili.
