At the conclusionof the IndependenceDayweekend,


Mastheadboatersheadedoff in threedifferentdirections
from Mattituck Some returnedhomeon the Mondaymorn-
ing,some headedeasttoward PlumGut and ultimately
Shelterlsland,whilefour boatscut acrossthe Soundfor a
visitto the ConnecticutRiver.
The ConnecticutRiverportion,organizedby Ginny
Llewellynand BarryZusman,added both historyand enter-
tainmentto the river'sobviousdelights.

chanteynight,and the placewas packedand hoppingto the
musicof a four-piecegroup.
With the help of rentalcars,Tuesday'staste of history
was a visitto GilletteCastle,formerhomeof stage actor
WilliamGillette,best knownfor his portrayalsof Sherlock
Holmes. In fact, it was Gillettewho createdthe Holmes
"look"with the deerstalkercap, curvedpipe and magnifying

The group stayedat BrewerDauntlessMarinain Essex Earlythat evening,the skiesopenedup whileall wereon

and sailboatsof all sizes,I couldn'thelpbut feelan extrapangof gratitudefor Americanindependence.

My mindwent backto a conversation I had severalyearsago with a relativein the Southof France' Knowing
his lovefor the sea and the obviousboatingpossibilities offeredby the beautiful
coastlinealongthe Mediterranean, I askedwhetherthey took advantageof it.
"Oh no!"was the reply,"thatactivityif strictlyfor the veryelitehere' Owningany
typeof boat,maintaining it fromfuel to dockageis not for the averageperson'no
matterhow enthusiastic.The closestwe cometo it is a briefrentalof a small

Yetherewe were surroundedby someof the equallyexpensive realestatein
the world,savoringmaritimepleasuresin all their glory. Some of the vesselsmay
well havebelongedto the richand famousbut for the most partthe own-
ers/occupants were averagepeople,exercising theirrightto waterrecreation
accordingto theirchoiceand financialability.Despitethe currentsetback,the
Americandreamwas obviouslyaliveand wellfor boatersand sailorsfromall
walks of life.

lsland. "MotherNature"treatedus to a nasty,gustydown-
pour in the mid-afternoon.Fortunately most of us were on
board in time to close our hatches! We resurfacedin time
for dinnerand then spentthe betterpart of the nightwatch-
ing brilliantlightningand listeningto wind and thunderas
anotherviolentstormsystempassedthroughwithoutmajor
incident.

able to raft up in a slow and orderlyfashion,but then therewas an explosionof vesselsand the
organizedchaosbegan!We neededto get someanchorsout as the lineexpandedand by the time we
were done,therewere 19 boatsinvolved!lt must havebeenquitethe sightto othersailorscominginto

Remembering that a chainis onlyas strongas its weakestlink,let's remembernextyearto all be on
the samepagewhen it comesto depading.Somememberswere forcedto breakawaysoonerthanthey
would havewhenone of the boatsbrokeoff on theirown and left the otherswithoutanytie-up!

Spiqy Chili 1 bay leaf

1 cup hot chilipowder
The amount of chilies and spices in this recipe are a suggestion. 114cupgroundcumin
Please use your discretion. You can always add heat but you can't 1 tbs eachcorianderseed and cuminseedtoastedand finelyground
take it away and I make a hot chili. My family prefers hot and spicy 1 tsDcinnamon
1/2 tsp.allspice
but the great thing about chili is you can play with the ingredientsand
1/2 tsp. groundginger
never worry about ruiningthe recipe!!
2 tbs hot paprika
lngredients Garnishes:
1/8 cup vegetableoil Cilantro,sour cream,limeand gratedcheddarcheese
2 tbs, oliveoil
1 1/2 lbs. oork shouldercut into 1 inchcubes Heatvegetableoil undermediumflamein Dutchovenand searmeat.
1 1/2 lbs. beef stew meatcut onto inchcubes Removebrownedmeatto bowl reservingliquids.Add oliveoil to Dutch
2 largeonionsroughlychopped ovenand sautdonions,carrots,celery,bell pepperuntilsoft. Nextadd
5 or 6 largeclovesgarlicroughlyminced tomatopaste,garlic,chipotlepeppersandjalapenosto pot and stir,cook
2 largecarrotsdiced 1 minute.Afterwhichadd spice ingredients exceptbay leave;givea stir and
2 stalkscelerydiced cook overlow heatfor 2 to 3 minutes.Add back in brownedmeatwith
1 largegreenbell pepperchopped reservedliquids,beef stock,coffee,adobosauce,Worcestershire sauce,
3 chipotlechiliesin adobochopped bay leaf and 112the can of tomatoes.Bringto a gentleboil then lowerheat

We found an Easy Chili Recipe on Dad's iPhone and modified it as we saw fit

1 poundleangroundbeef (Dadfoundturkeyburgerson sale- brokethem up into smallpiecesinstead)


1 cup diced onion(we dispensedwith the measuringand usedone largeVidaliaonion)
2 clovesgarlicfinelychopped
2 (16 oz)cans kidneybeans(drainedand rinsed- we chosenot to drainor rinse)
2 1/zcups salsa - thick and chunky(we had 1 7z cups on hand so we used that)
1 (4 oz)can diced greenchilies.we founda cool lookingchilipepperat Best Yetand choppedit. Do not touchyourface afterchoppingit like Elliotdid
- you'llbe feelingit all day
2 tsp chilipowder(l told Levihe didn't haveto be exact- | thinkhe spilledin aboutone extratsp overthe one he measured)
% tsp groundcumin(againLeviwas in chargeof this measure)
*We added 1 largegreenpepper- diced,and 1 8oz can tomatopaste

1. Cook and drainthe meat,saut6onionand garlicin largeskillet


2. Add the beans,salsa,chilies,chilipowderand cumin. Bringto a boil. Reduceheatto low; cover. Cook stirringfrequently, for 2O-25minutes.
(We were busypackingfor the cruiseso we threw it all in a slow cookel on high,for about4 hours)
3. Get up aftermidnight- transfercontentsof slow cookerinto 5 smallercontainers for quickchilling,then get up earlyon cruisedayto transfercooled
container- Afterour 2-3 hoursof poundingin 3-4 foot seas,I sure am glad I wrappedit in threelayersof plasticwrap.
