Storage
Store honey at room temperature, neverin the refrigerator. If honey crystallizes,simply place the honey container inwarm water and stir until crystalsdissolve. Or, microwave 1 cup of honeyin a microwavesafe container, stirringevery 30 seconds, until crystals dissolve.Be careful not to boil or scorch thehoney.

Substitution and Cooking Tips
For best results, use recipes developedfor using honey. When you substitutehoney for granulated sugar in recipes,begin by substituting honey for up tohalf of the sugar called for in the recipe.With experimentation, honey can besubstituted for all the sugar in somerecipes. When substituting honey forsugar in baked goods:

Reduce the liquid in the recipeby 1/4 cup for each cup ofhoney used.

Add about 1/2 teaspoon bakingsoda for each cup of honey used.
