Here is a drink where both the flavor and color of the base spirit
shines. When properly made according to its original specifications,
the Old-Fashioneds amber glow is no longer obscured by phosphorescent refugees from the produce department. The biting edge of
the whiskey is not dulled by corn syrup but instead gently softened
by a touch of water, sweetened by a lump of sugar, and accented by
the bitters, which bind together the drinks few ingredients in harmony. Chilled and anchored by a single large cube of ice, the drink
is at home in its low-slung, eponymous glass. As the cube slowly
melts, the potion incrementally alters, calming, over time, both itself
and its owner. This is a drink to be lingered over, a drink made for
contemplation.
By the end of 2009 or so, the Old-Fashioned had taken pride of
place atop the menus at not only the best cocktail bars in the United
States, but also restaurants and hotel bars. At many, it became what
it had not been in an age: the bars top-selling drink. And your
mother or grandfather was no longer the one ordering it. You were.
It was indeed, as George Jean Nathan said, a member of the cocktail trinity, even though it was the last to be recognized as a member of the triumvirate.
