It's that time of year when zucchini is abundantly available from gardens everywhere! If you don't have any your neighbor's small garden does. (Next year pick up a plant at your natural foods store, put it in a garden, or save that space and plant it in a flower bed, and share with your extended family and friends.)

Not only is this squash adaptable to countless recipes - a great example - but has copious nutrition benefits. It is chock full of vitamins and minerals, even antioxidants! And...it is very low in carbs and calories - only 17 grams of carbs in approximately half a cup.
