William Angliss Institute is the Government
endorsed Specialist Centre for foods,
tourism and hospitality; the only one of its
kind in Australia. The Institute is focused on
delivering outstanding individuals to support
the foods, tourism and hospitality industry.
First opening its doors in 1940, William
Angliss Institute has expanded its programs
and extended its reach to meet the
ever-changing demands of students and
businesses in this dynamic environment.
Through continuous development, the
Institute has maintained its leading
reputation providing specialist training to
30,000 enrolments annually, in programs
ranging from short courses, through to
certificate, diploma, advanced diploma and
most recently, graduate certificates and
degree courses.
Along with the two main campuses in
Melbournes CBD and Surry Hills in Sydney,
William Angliss Institute also delivers training
direct to industry partners through offices
in Adelaide, Brisbane and Perth, four joint
venture campuses in China and through
national and international consultancy
projects around the world.
How to Apply
There are a number of criteria and
steps to take in order to commence an
Apprenticeship/Traineeship.
1. Register your interest with your
employer.
2. The prospective apprentice/trainee and
the employer must sign-up with an
Australian Apprenticeship Centre (AAC)
(visit www.australianapprenticeships.
gov.au to find the closest centre to you).
3. The AAC will determine the eligibility of
the apprentice/trainee for the course
selected.
4. If eligible, either the new apprentice/
trainee, employer or the AAC will
inform William Angliss Institute that
the apprentice/trainee is signed-up to
undertake training.
5. William Angliss Institute will enrol the
apprentice/trainee in the course.

apprenticeship program that allows
training to happen on-site at your

What is an Apprenticeship*
or Traineeship*?
Apprenticeships and traineeships combine
practical work with structured training to
provide a valuable, relevant and nationally
recognised qualification. They have been
designed to encourage the butchery
industry to employ new staff and upgrade
the skills of existing workers.
William Angliss Institute offers five meat
processing apprenticeships for the meat
processing and meat retail sectors. All
apprenticeships and traineeships offered
through the Institute are developed in
consultation with industry leaders to
ensure the course content and delivery
is relevant to real workplaces.
What are the Major
Benefits of an Apprenticeship*
or Traineeship*?

There may be financial support
available to a business that signs up an
eligible apprentice/trainee. Employers
should contact their local Australian
Apprenticeship Centre to determine the
eligibility status of their employees.

structured training program.

access to quality training which
provides both theoretical and practical
competencies benefiting both the
employee and the business.
Course Structure
These training programs have been
designed with industry needs in mind and
can be customised to the individual training
requirements of your business. Employees
can be trained and assessed while they
perform their roles ensuring minimal
disruption to daily business operations,
facilitating the application of training to
actual job tasks.
Qualifications are competency based
and training will be conducted over
approximately a two year period.
Training plans are tailored to suit
enterprise requirements.
The Institute also offers Skills Recognition
Audits (SRA), the process that provides
current industry professionals without
a formal qualification the opportunity
to benchmark their extensive skills and
experience against the standards set out in
the hospitality, tourism, retail and business
training packages. In so doing, participants
can gain a Statement of Attainment
or a qualification (e.g. Certificate IV,
Diploma or Advanced Diploma), formally
acknowledging their work experience.
The SRA process is a learning and
assessment pathway which encompasses:

Skills auditing

Gap analysis and training

Credit transfers

Certificate III in Meat Processing
(Meat Retailing), comprises 16 units
and has completion of Certificate II
in Meat Processing (Meat Retailing)
as a pre-requisite
Certificate III Meat Processing
(Food Services) for counter staff,
comprises 12 units
Certificate III in Meat Processing
(Boning Room) for boners in
processing plants, comprising 6
compulsory core units plus technical
units (to the value of 30 points)
