An effective way to engage students in self-reflection is for the teacher to reflect so I had my own journal throughout the exhibition. I would write in it exactly when students had to reflect in theirs :) and I would read aloud to them what my thoughts, worries, achievements were. They simply loved this openness and exchange :)
I also made drawings and colored - I love expressing myself in more ways!
