AUTUMN BREEZE SPECIAL DINNER. The Rensselaer
Countys Troy Senior Center, 19 Third Street will hold its monthly
special dinner - Autumn Breeze on Thursday, September 18.
Brian Zapel will entertain us beginning at 11:00 am. The noon
menu will be Spaghetti & Meatballs, Tossed Salad, Italian Green

NEIL DIAMOND TRIBUTE. Rensselaer Countys Everett
Wagar Senior Center, 2 Roxborough Road, Grafton, NY will
be holding a Tribute to Neil Diamond with Jeff Jarvis, on

great country. Our government is simply a tool that allows us to achieve
our goals in a civilized and organized manner.
September 11, 2001 proved to us and the world that when the chips are
down it is individuals who make a difference. To us, hero is a term
more appropriately attributed to the actions of Todd Beamer, Thomas E
Burnett, Jr, Jeremy Glick and Mark Bingham, the people who took it
upon themselves to take down United Flight #93, fully aware of the con-
sequences. But, they did it, and in so doing, saved countless lives. Indi-
viduals like these men are the ones who have built this country and made
it great. They didnt wait for any directive from a government agency.
They didnt beg for help or anguish over what they knew they had to do.
They simply did it, and in doing so the terrorists were denied.
So, never forget!
It is during times like these that many of us feel that our contributions are inadequate or not important. But, every effort we make on our own behalf or on behalf
of others solidifies the foundation upon which our system of government sits. It is not the politicians, nor the media pundits, nor the bureaucracies that make this
country great. No.. its we, the people. Celebrate our freedoms, and be vigilant so that we dont lose them.

As the 13th anniversary of September 11 approaches, our thoughts are once again with
all those who lost loved ones on that tragic morning. Remember the names, faces, and
lives of the men, women, and children who were killed, and look for ways to ensure that
each and every one of them is not forgotten. We invite you to join us in remembering
September 11 and all that this day means.
There are numerous ways to participate in the annual commemoration and one of the
most powerful is performing acts of service in your communities in remembrance of the
victims of 9/11. When you choose to commemorate the anniversary of 9/11, you are
playing an important part in memorializing those who were killed, honoring the sacrifices
of the first responders, and remembering the spirit of unity that emerged in the aftermath
of 9/11.
However you choose to commemorate this anniversary, thank you for joining us as
we take a day to remember and honor.

EASTON QUAKERS SPONSOR PRESENTATION BY EN-
VIRONMENTAL ACTIVIST On Sunday, September 14, the
Easton Meeting of the Religious Society of Friends (Quakers) will
celebrate Easton Day, with a presentation by Pamela Boyce Simms,
a New York State Quaker leader focusing on Earthcare. She is also
a leader of a seven-state consortium within Transition US, a grassroots
environmental movement working to build resilient communities that
are able to withstand severe energy, climate or economic shocks.
Her topic will be "Walking the Talk of Our Ancestors." All are wel-
come to this presentation, which will be at 1:30 p.m. at the Easton
Friends' South Meeting House, 227 Meeting House Road (off State
Route 40 about six miles north of Schaghticoke), in Easton, NY.
The public is also invited to all other events of Easton Day, which
include registration at 10:00 a.m., followed by the 10:30 a.m telling
of Feathers of Peace story and Meeting for Worship. Potluck

Easton Day is the annual commemoration the 1777 "Feathers of
Peace" incident when a party of Burgoyne's Indians set aside hos-

"the Indians recognized that they were peaceful people - and that
recognition extended to tribes beyond the borders of Pennsylvania.

Have you given any thought to milking camels? Camel milk is hitting the mainstream courtesy of
Americas drome-dairies.
Were all used to cows milk alternatives, including goat, sheep and even legume and nut milks like
soy and almond. Another milk alternative is gaining traction with curious American consumers:
camel milk. Technically, camel milk isnt new. Milking and riding camels is extremely common
elsewhere, particularly in native camel habitats. There are two main types of camels, the dromedary
or Arabian camel, the one-hump camel found in Africa, the Middle East, and Australia; and the
Bactrian, the two-hump camel found in
Central Asia. Milking either type, the result
is the same. Camel milk has 2 percent milk
fat, a creamy white color and a sweet,
slightly salty aftertaste. There are only seven
camel milking facilities in the U.S.
Regulation on camel milk varies widely, with
most camel milk drinkers still buying from
small farmers or within membership
associations.
In June, a camel milk dairy and distributor,
Desert Farms in California, started selling
camel milk in California Whole Foods stores
for $18 a pint.
Michigan farmer Marlin Troyer says The camel is the one of the most misunderstood and
underestimated animals in the U.S Camels milk is definitely a benefit to anybodys diet.
Camel milk advocates reference studies demonstrating that the anti-inflammatory beverage will
soothe symptoms of Crohns disease, IBS and diabetes thanks to its low sugar content and high
levels of protein and vitamin C. Some have even suggested camel milk can improve autism-related
symptoms (though the science remains up in the air on that claim).
In many ways, its strange that its been hard to get camel farming over the hump in terms of
mainstream acceptance. Despite their unshakably bad rap for kicking and spitting, camels are
extremely sensitive, intelligent creatures.
Camels dont have natural predators, and accordingly, theyre more curious than combative. They
also dont have teeth on their upper mandible, just a jagged underbite and a few molars. A camels
loose, split top lip seems like an extension of its big, curious nose.
Even with a gentle disposition, milking a camel is no small task. Unlike cows, which can be separated
from calves immediately after birth and keep producing milk, camels must be encouraged by their
babies to let down their milk. When a calf nuzzles its mothers udder, the release of oxytocin in
the mothers brain triggers muscle contractions, which causes the milk to drop. The calfs tail will
go up in anticipation, and all four of the mothers teats will fill up like water balloons. The muscle
contractions also cause a camel to suddenly become very still and blink hard several times, sometimes
even shedding a tear or two. (If youve seen the 2003 German documentary, The Story of the
Weeping Camel, you know how true this is.) Its one of the only ways to tell when its possible to
milk. You must be quick. The milk is available for just 90 seconds at a time. Theres no limit to the
amount the mother will produce, so as long as the baby can prime the mother, milking can continue.
Raising a herd can take considerable time. Mother camels gestate their 75 lb. calves for 13 months.
All that waiting, and when its finally time, the birth tends to take just 20 minutes. Typically, camels
live 35 to 40 years old. Despite difficulty procuring the milk (and some sidelong glances from fellow
farmers), the milks benefits and a growing population seeking another alternative to traditional cow
milk means camel milk may finally make it over the hump in the United States.

WEEKEND- Cornell Cooperative Extension of Warren County, in partnership with DEC Sportsman
Education volunteer instructors, will be organizing a Hunter Education Classes on Saturday, September
13th and Sunday, September 14th. The following classes are being offered each day; Sportsman
Education, Bow Hunter Education, or Trapper Education (you may choose ONE class per day, bow
hunter students must have completed hunter education previous to registering for bow hunter education).
Those who have completed online training MUST pre-register and must bring their printed certificate
of completion with them to class. They do not need to pick up the books. All classes are free and open
to the public (ages 11 and up). Classes will be held from 8:30 am - 4:30 pm at Pack Forest in
Warrensburg. All courses are "Home Study" courses, materials MUST be picked up at the CCE
Education Center, 377 Schroon River Road, Warrensburg by August 28th at 4:30pm. The CCE office
is open 8:30 am 4:30 pm Monday through Thursday. The workbook section of the bow hunter and
hunter education courses must be completed for students to gain entry into the class. Lunch will be
available to purchase for $7.00 and will include either (2) Hamburgers or (2) hot dogs with chips and

CEMETERY TOUR- Come and learn more about the history of
Glens Falls and Queensbury, and the people who came before us.
The Annual Cemetery Tour at Glens Falls Bay Street Cemetery will
be held on Saturday, September 27. This is a joint project of the
Chapman Historical Museum and the Glens Falls Community The-
ater. As people walk through the cemetery at scheduled times, com-
munity theater players stand at gravesites and bring to life the stories
of eight of our community ancestors. This event sold out last year, so
we strongly recommend advance reservations. Walking tours are
scheduled for 10am, 10:30am, 11am, 12 noon, 12:30pm, and 1:00pm.
If youd rather ride than walk, we have two golf cart tours at 10:00am
and Noon. New this year, we will have 6 and 8 passenger golf carts.
The cost is $10/person, $8/students, and a 10% discount for mem-
