Blackcurrant Jelly Toddy
2 oz. Hendrick's Gin½ oz. Honey Syrup (two parts honey mixed with one part warm water)½ oz. Pink Cloves Cordial by Phillips and Bristol1 level teaspoon Blackcurrant Preserve½ oz. fresh lemon juice1½ oz. hot water 1 cinnamon stick garnish
PREPARATION
Assemble all the ingredients except the garnish in a mixing glass and stir well.
Strain through atea strainer into a warmed mug. Garnish with a cinnamon stick.
Blueberry Thyme
2 oz. Hendrick’s Gin¾ oz. Apple Juice1 bar spoon blueberry & thyme jam
PREPARATION
Shake, double strain into a martini glass. Garnish: with sprig of ThymeTo make Blueberry & Thyme Jam: Heat sugar and water till sugar dissolves. Add 4 segments of orange and 3-4 leaves of fresh thyme. Place blueberries in separate saucepan with 20ml balsamicvinegar, heat and stir for 10 mins. Finally mix the two together in a mixing bowl, and store.
Bonnie Fizz
1 oz. Hendrick's Gin5 blackberries1 oz. fresh lemon juice½ oz. simple syrup½ oz. crème de mûreChampagne
PREPARATION
Muddle the berries with the syrup. Add the remaining ingredients with the exception of thechampagne and shake well with ice. Strain into a tall glass over ice and fill with champagne. Topwith crème de mure. Garnish with a long slice of English cucumber.
