Weight Watchers Curtido Salvadorean Coleslaw recipe
Makes 6 servings
1 medium head of cabbage, chopped1 small onion, sliced2 small carrots, grated1/2 teaspoon oregano1/2 teaspoon cayenne pepper or paprika1 teaspoon olive oil1/4 cup vinegar 1 teaspoon brown sugar 1 teaspoon salt1/2 cup water
1. Place the cabbage in boiling water and boil for no more than one minute. Discard thewater.2. In a large bowl, mix the cabbage with the sliced onion, grated carrots, olive oil, vinegar,oregano, cayenne, brown sugar, salt and water.3. Chill in the refrigerator for at least 2 hours before serving.
