Sausages with Bell Peppers

Ingredients:

  • 1 ¼ pounds of loukanika or garlic flavored sausages
  • 3 tablespoons of extra-virgin olive oil
  • 2 red onions, thinly chopped
  • 2 cloves garlic, finely chopped
  • 2 red bell peppers, seeded and thickly sliced
  • 2 green bell peppers, seeded and thickly sliced
  • Salt and freshly ground black pepper

Directions:

  1. Prick the sausages all over with a fork.
  2. Blanch the sausages in a large pot of salted boiling water for 3 minutes. Drain well.
  3. Heat the oil in a large frying pan over medium heat. Sauté the onions for 8 – 10 minutes, or until lightly browned.
  4. Stir in the garlic and bell peppers. Sauté over high heat for 5 minutes.
  5. Cut the sausages into bite-sized pieces and add to the bell pepper mixture.
  6. Cook over low heat for 15 – 20 minutes, or until tender.
  7. Season with salt and pepper. Serve hot.

Serves: 6 Prep time: 10 minutes cooking time: 35 – 40 minutes
