Introduction
Welcome to my “South of the Border” kitchen where you willfind healthy and delicious meals just waiting for you. The recipes inthis cookbook have been especially designed for the Latin-American-taste lovers. You will find a variety of ways to prepare these tastefuldishes in a healthy way, enjoying the taste of fresh seasonings with alow-fat and dairy-free combination.There is an incorrect concept that Latin-American meals are highin dairy and meats. This may be true in just a few dishes, but it is by nomeans a norm. Our traditional Latin-American lifestyle goes back tothe time of our ancestors who practiced a simple lifestyle. Their foodsource came by means of hard labor, working in the fields with theirhands. They knew nothing of refined foods and substitutes, and theywere able to instill in their generations the practice of simplicity in itsmost natural form. Their staple foods were beans, corn, rice, vegetables,and fruits. From these simple foods they prospered in health. We canstill enjoy abundant health today in keeping the traditions of our past.I am thankful I can share with you our Latin-American taste in itssimple and natural form. I hope you will enjoy them as my family hasfor many years. I also hope you will incorporate the eight simple waysto good health which are listed throughout this book, and that you andyour loved ones will be rewarded with abundant health and happiness.May God’s richest blessing be with you!
