Blueberry-Lemon Pancakes Recipe

Makes 1 serving – 4 pancakes

Love the citrus of lemon zest with the blueberries!

Ingredients
1/2 cup flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 pinch salt
1/2 cup buttermilk
1 egg
2 teaspoons lemon zest
1/2 cup blueberries
Directions

1. Mix dry ingredients. Mix wet ingredients. Combine and fold in blueberries - the batter
may be a bit lumpy.

2. Let sit for 15 minutes then Pam fry.
