Meal 1Sausage Calzone
Tossed Salad
¾ lb ground Italian sausage½ c onion, diced½ c green pepper, diced(1/8 t garlic powder)4 oz can sliced black olives8 ounces pasta/spaghetti sauce2 tubes refrigerated pizza crust8 oz pkg shredded mozzarella(Grated parmesan cheese, olive oil)
½ bag salad mix ½ peeled & sliced cucumber (Italian salad dressing, croutons)
*Reserve ¼ lb of sausage for meal #4.
Cook & break up sausage in med skillet. Drain. Add onion,garlic, and gr pepper. Cook for 5 min. Stir in pizza sauce &sliced olives. Unroll 1 pkg of dough across baking sheet.Sprinkle ½ of cheese in 2 rows on the dough with about 2inches in between. Top cheese w/ meat mixture. Top eachrow with remaining cheese. Unroll 2

& seal by pressing edges. Pressdown the center creating 2 calzones. Cut down the center of the dough, making 2 separate calzones. Press the seam toseal. Brush with olive oil & sprinkle with Parmesan. Cut twoin slits on top of each calzone. Bake 22-25 min.
Serve w/ tossed salad.
Meal 2Classic Chicken Salad onCroissant
Creamy CornGrapes
2 chicken breasts(3 ½ T mayo)2 stalks of celery, chopped½ onion, chopped(1 t relish, ¼ t garlic pwdr, salt & pepper to taste)1 pkg bakery croissants
15 oz can corn, drained ½ pkg cream cheese(2 T butter, 1 t garlic salt, pepper to taste)1 lb red seedless grapes
Cook and finely chop chicken breasts. Mix chicken, mayo,celery, onion, and relish well. Season with garlic powder,salt, and pepper. Add more mayo if needed. Spoon ontocroissants.
In a saucepan combine corn, cr cheese, butter, and garlic salt. Cook over med heat for about 10 min, until smooth &heated through. Season w/ pepper & salt to taste.Serve w/ grapes.
Meal 3Simple Meatless Chili
Tortilla ChipsCelery & Ranch
2 - 15 oz cans kidney beans, drained15 oz can chili beans in sauce15 oz can diced tomatoes, drained15 oz can corn, drained(1 t dried basil, salt & pepper to taste)
6 oz bag tortilla chipsCelery (Ranch dressing)
In a med saucepan, combine all ingredients and simmer low 30 min, covered.
Serve and scoop chili with tortilla chips.Serve sliced celery stalks with ranch for dipping.
Meal 4Fancy Ziti
Tossed Salad Parmesan Rolls
1.5 c cooked ziti pasta¼ lb ground sausage¼ c diced green bell pepper 14 ounces pasta/spaghetti sauce(¼ c water)
½ bag salad mix ½ peeled & sliced cucumber (Ranch salad dressing, croutons)French rolls(Butter, garlic salt, grated Parmesan cheese)
Boil ziti according to pkg directions. Meanwhile, sautésausage & bell pepper in large saucepan. Cover & cookover med-low heat 15 min; drain excess. Pour in spaghettisauce & water to heat through. Stir in ziti & serve.
Toss salad w/ cucumber & Ranch drsng. Top w/ croutons.Spread tops of rolls w/ butter. Sprinkle w/ garlic salt and Parmesan. Bake @400, 8-10 min.
Meal 5Creamy ChickenOver Rice
Green BeansFrench Rolls
(1 T butter)½ pkg cr cheese, softened½ can cr of chicken soup(1/8 c milk)(Salt & pepper to taste)2 c cooked, cubed chicken(2 c hot cooked rice)
15 oz can cut green beansFrench buns(Butter)
In a med saucepan over med heat, melt butter and cr cheese. When thoroughly melted & blended, add soup andmilk. Add salt & pepper to taste. Add chicken and simmer uncovered, 15 min, or until mixture is hot & bubbly. Add alittle milk if mixture becomes too thick. Serve over hotcooked rice.
Heat green beans and season as desired. Serve w/ hot rolls and butter.
