BeerEasy.com Lake Superior PorterThe BeerEasy.com recipe series was in need of a dark, roasty beer. I looked to myrecipe database and found my Lake Superior Porter. This recipe produces a beer alot like Great Lakes Edmund Fitzgerald Porter, hence the name. This beer is roasty,bittersweet, and moderately bitter and even has a bit of hop flavor. The chocolateand black patent malt give it roasty flavor and aroma. The crystal malt providessweetness and the unique Special B malt gives a bittersweet caramel like flavor. Let this beer age 2 to 3 weeks in the secondary before bottling, it needs some extra timeto mellow and age, but it is DEFINITELY worth the wait!Volume: 5.5 gallonsOG: 1.059 (Original Gravity)Approximate FG: 1.014 (Final Gravity)Approximate ABV: 6.0%Approximate IBU: 39 IBU (bitterness units)SRM (color): 36 SRMGrains
0.75 lb English Crystal (55-60L)
0.50 lb Special B
0.67 lb Chocolate Malt

1.00 oz. 12.2% AA Galena Pellets – 60 minutes (bittering)

1.00 oz. 4.5% AA Willamette Pellets – 5 minutes (aroma)Yeast 
Wyeast 1028 London Ale Yeast (liquid) OR White Labs London Ale Yeast (WLP 013) (liquid), if absolutely necessary could try Fermentis SafAle S-04English Ale Yeast (dry yeast), but I really recommend either liquid yeast forthis brewPriming Sugar
¾ cup (4oz by weight) corn sugarQuick Instructions
Bring ~1.5 gallons of water in pot to ~155F, steep grains in grain bag for 30minutes,
maintaining temperature
, after 30 minutes remove grain bag.
Add water to bring volume to 3.25 gallons.
Bring wort to boil, remove from flame and add 3.0 pounds of dry malt extract. Bring wort to boil.
Add bittering hops, set and begin timer for 60 minutes.
With 15 minutes remaining on timer, pause timer. Remove pot from heat,add remaining 3.5 lb of dry malt extract.
Return pot to heat, bring to boil, when boil begins, start timer, add flavorhops.
Add aroma hops with 5 minutes remaining in boil.
Cool wort, add to carboy/bucket, add top off water to make total of 5.5gallons and then pitch yeast.
Ferment in the mid/upper 60s.
After fermentation is complete, rack to secondary carboy and let age for 2-3weeks and then bottle beer, give this recipe at least a few weeks in the bottlefor additional agingCopyright © 2008 BeerEasy.com, All Rights Reserved3
