Cheesecake Pumpkin Pie

Preheat oven to 350

2              8oz pkg. Regular cream cheese

1- 1/2 Cups     Sugar

3             Eggs

2 Tsp        Vanilla

1 -1/2 to 2
Cups   Pumpkin

2 Tsp       Pumpkin pie spice

2:              9 inch pie shells

 Mix: on low cream cheese & sugar -just until then are combined

 Add: eggs ONE at a time mixing slightly after each one.

 Add: Vanilla, Pumpkin, and Pumpkin pie spice. (Use the full 2 cups if you want a stronger
pumpkin taste!)

 Mix: on low until pumpkin is blended; do not over mix.

 Divide mixture equally; pour into both pie shells.

 Place in oven and set timer for 35 min.

 When checking at the 35 min mark, Pies will have puffed up a little. Also look for it to be
set, but not done middle (when you insert a tooth pick it should come out a little “dirty.")

 Turn off oven and Reset timer for an additional 15 min. with door slightly ajar.

 Remove pies from oven and allow them to cool completely on cooling rack.

 Pies will continue to set as it cools.
