Smoked Trout Diphealthy and nutritious compared to other dips
Smoked trout about 2 cups or one 6-8 oz pk1 ½ to 2 cups Greek yogurt Fresh dill1/2 to 1 cup, finely chopped or ¼ to ½ cup dried dillLemon zest from 1 lemonLemon juice from 1 lemonSalt, pepper, and garlicRemove the skin from the trout. In a medium size bowl, break the trout into fine pieces. Thenstir/smash with a fork or use a mixer to break up larger pieces. Dont puree the troutleave smallpieces. Add the remaining ingredients, then stir well:n Greek yogurtif there is whey (water) on top pour it off before adding it to the trout. (If usingregular, plain yogurt, it must be drained overnight using a colander lined with coffee filters.)n Finely chop the dill.n Zest the lemonusing only 2 or 3 strokes per section of the lemon. If the lemon is small, you mayneed to add zest from half of another lemon.n Juice the lemon after it has been zested.n Add salt, pepper, and garlic to taste. Start with no more than ½ teaspoon each, then add more aftertasting.Serving suggestions:
Serve with small rice cakes or crackers
Serve with veggie sticks: celery, carrots, jicama* (also called Mexican potato) or fruit wedgesapples, pears
oil patty pan squash. Press gently with spoon to make a depression. Fill with a spoonful of trout dip.
