In other words, thelivestock population isexpanding fasterthan the humanpopulation and isprojected tocontinueto expandas the Chinese middleclasses increasingly adoptmeat-centred diets and as theWestern taste for meat, eggs anddairy products continues to grow(along with our waistlines).
This trend will contribute to continuingmalnourishment in the developing world, global warming, widespread pollution, deforestation, land degradation, waterscarcity and species extinction becausemore animals mean more crops are neededto feed them: the planet cannot feed bothincreasing human and farmed animalpopulations. So if we are trying to reduce our car use, limit the amount of water we waste, become more ‘energy-efficient’ andgenerally lessen our environmentalimpact, we must also examine the mostimportant factor of our personalecological footprint: what we eat.
