RESEARCH & DEVELOPMENT (CENTRE OF EXCELLENCE):

The overall process of R& D is comprises of three steps:
i. Analytical
ii. Microbiology
iii. Packaging

i. Analytical
In this process research and development department take a random sampling of
flour and other mixture for checking their protein and moisture level to ensure that
it is according to the standard of biscuit. This helps out making the better quality
biscuit and maintaining its standard. They also focus towards the recipe and its
standard ingredients required for specific biscuit. The other main work done by
this department is to analyze the consumer behavior and developing new products
according to the requirement of market. Their most important responsibility is to
watch out the whole process from mixing till finished goods and to analyze the
problems and finding its solutions. This all work is done according to the ISO
22000 standard.

ii. Microbiology
This department has the most important responsibility which is to maintain the
safety of food.

iii. Packaging
In this step, the biscuits produced are to be packed. If the biscuits are not packed
in the right packing material, or, if the packing material is not of the standard
quality, then all the procedure we used to make the biscuit will become useless.
Every biscuit has its own sensitivity, and it may only be in its original condition
till consuming, if it is in its respective packing. Packaging is also the main tool for
attracting consumers, so the good quality and innovative packing should be done
for each biscuit.
RAW MATERIAL STORE:
This department stores all the raw material in it. This includes flavors, peanuts etc.
Some raw material such as peanuts is the example of the material which is not
available throughout the year. Due to this reason, these materials are stored for a long
period which is really a major and risky task. The temperature of this store is
maintained up to 5ºC to 15ºC. This helps maintain the raw material in the standard
condition throughout the year.

MIXING LINES:
Mixers are the main machine installed in EBM. This is used to mix the dough of flour
used in any specific biscuit. It is a typical machine and it requires training before
using it. All the workers working there are supposed to take training and work
according to it. The instructions are also written on the machine in Urdu so that the
workers may take information while they need it.

CUTTING:
In this process, the dough is given the shape of the particular biscuit. There are
different plants installed for cutting of different departments which gives the shape
and the impressions of that biscuit to its dough.

BAKING & COOLING CONVEYOR:

The baking oven contains three sections where the heat is given in the different
temperatures in every section. In the first section, heat is given up to 215°C to 225°C.
Afterwards in the second zone, heat is given up to 225°C to 250°C. In the last zone,
the heat is let down from 250°C to 215°C. Then the biscuits are gone in the cooling
conveyor and are taken to the room temperature.

SORTING & PACKING:

In this process, the damaged biscuits are sorted out to be put in the process from the
beginning. These biscuits are crushed and are mixed with the dough to be prepared
again. The other biscuits are packed in its approved packing. The packed biscuits are
then putted in the master cartons and then OK Stamp is being put on the cartons. Only
approved cartons are supposed to supplied in the market.
FINISHED GOODS STORE (FGS):
The finished goods are then stored in FGS before supplying it. These biscuits are then
supplied according to the demand in the market. All the supply of the biscuits is
maintained by this store. Suppliers also give information about the demand of
particular biscuit to this department. The biscuits are then made according to its
demand.
